As current Executive Chef for PSSE, Justin Frankenberg has always had a passion for food.
Chef Frankenberg began his culinary adventure, as many cooks do, as a young teen washing dishes and chopping vegetables at a restaurant close to his hometown of Washington, DC. He was hooked on the action and adrenaline pumping through the kitchen and realized that this was something much bigger that he wanted to be a part of.
After receiving his Associates degree and two Bachelor of Arts’ degrees in food science & education and foodservice management from Johnson & Wales University, knowing his education had just begun, he turned to the kitchen.
In 1996 Chef Frankenberg began his career at The Atomic Grill in Providence, Rhode Island, which was owned by well-known restaurateur, John Elkhay, as a line cook.
Throughout his young career in Washington, DC, Chef Frankenberg studied under and learned from such notables including: Roberto Donna ( Peche ), Jean Louis Palladin (Peche), Jaime Stachowski (Peche, ECiti, Restaurant Kolumbia), Johnny Monis(Chef Geoffe’s), Jeffrey Buben (Bistro Bis), Charlie Trotter (CT Catering), Geoffe Tracey(Chef Geoffe’s), Robert Nava (Restaurants-America, The Depot, Hard Rock Hotel), and Bruno Fortin (Bistro Lepic).
In 2005, it was time for a change and Chicago was calling his name. Chef Frankenberg packed his bags, made the move, and began working with Restaurants-America as their regional Executive Chef. There, he was responsible for opening four of their restaurants including: Townhouse, Midtown Kitchen & Bar, One North, and the Grillroom.
After 15 years of working directly with restaurants, Chef Frankenberg had the itch to try something new and joined the world of catering. Starting with a few small events through Charlie Trotter’s, Chef Frankenberg landed at J&L Catering where he spent three years as the Chef de Cuisine. In 2010 he continued his catering career as the Executive Chef for Paramount Events Chicago (formerly Behind the Scenes Catering), and was behind the execution of some of the most nationally recognized events such as: Chicago Gourmet, Rose Bowl, and Lollapalooza among many others.
Chef Frankenberg resides in Berwyn with his family, including two children. His favorite places in Chicago are: The Green Mill, Tank Noodle and any restaurant in Chinatown (especially, Lao Sze Chuan). He is also a huge fan of DIY projects.
